Early Bird Registration Fee: $900.00 (Deadline March 14, 2022)
Standard Registration Fee: $1,000.00 (Deadline March 28, 2022)

Course Overview:

This course introduces participants to the fundamental and applied aspects of pasta production and quality through lectures and laboratory demonstrations. Grain and ingredient quality, specifications and processing variables and their impact on final pasta product quality are presented in detail. The course focuses primarily on traditional dry durum-based pasta; however, non-traditional ingredients and fresh pasta are also covered through lectures and demonstrations. This course will be conducted in-person at the Northern Crops Institute and will also be available online (live-streamed) on Zoom.

Objectives:

  • Learn from industry professionals about the fundamentals of pasta production, quality assurance, die manufacturing and maintenance.

  • Gain important understanding of ingredient quality and how it impacts pasta processing and quality.

  • Learn how to evaluate the quality of durum wheat, semolina, and pasta.

Who Should Attend:

Managers, supervisors, technicians and others responsible for plant production, maintenance, production development, quality assurance, and sales of high-quality pasta products. 

How Do I Register?

This course will be offered both in-person and online. In-person registrations are limited to 30 participants, so we encourage you to enroll early. 

  • Early Bird Registration Fee: $900.00 (On or Before March 14, 2022)

  • Standard Registration Fee: $1,000.00 (On or After March 15, 2022)

  • Registration Deadline: March 28, 2022

In-Person vs. Online:  During the registration process, please indicate if you are planning to attend in-person or online.  Participants are allowed to switch between in-person and online up until April 19, 2022.  Please contact brian.sorenson@ndsu.edu for more information.

Important Note:

This course requires a minimum number of 10 registrations to be conducted, and NCI recommends that participants not book airfare until notified that the course is being conducted as scheduled. Once the minimum number is reached, NCI will contact all participants, who can then arrange airfare, as needed.  If the minimum number of registrations is not reached by March 29, NCI will contact all registered participants and provide a full refund of all registration fees paid. 

Cancellation Policies:

Requests to cancel a registration must be received on or before April 25, 2022 to receive a full refund. No registration fees will be refunded after April 25, 2022.  If NCI is forced to cancel this course due to insufficient number of participants, dangerous weather or other circumstances, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.

The room block closes on Monday, April 11, 2022. Reservations made after that date are subject to availability and current rates. Please note that lodging IS NOT included in the course registration fee.

Transportation:

Transportation between the airport to the hotel is the responsibility of each participant.  The Clubhouse Hotel has a complementary shuttle, and you can arrange a ride by calling them directly at (701) 282-5777.  Taxis are available at the baggage claim area, and Uber & Lift are also available.  NCI will provide daily transportation only between the Northern Crops Institute and the Clubhouse hotel.  At the conclusion of the course at 4:30 PM on April 28, 2022, NCI will also provide transportation to the airport.
