Course Overview:

 This course introduces participants to the fundamental and applied aspects of pasta production and quality through lectures and laboratory demonstrations. Grain and ingredient quality, specifications and processing variables and their impact on final pasta product quality are presented in detail. The course focuses primarily on traditional dried durum wheat-based pasta. This course will be conducted in-person at the Northern Crops Institute.

Objectives:

  • Learn from industry professionals about the fundamentals of pasta production, quality assurance, die manufacturing and maintenance.

  • Gain important understanding of ingredient quality and how it impacts pasta processing and quality.

  • Learn how to evaluate the quality of durum wheat, semolina, and pasta.

Who Should Attend:

Managers, supervisors, technicians and others responsible for plant production, maintenance, production development, quality assurance, and sales of high-quality pasta products.

This course will be offered in-person only, and registrations are limited to 30 participants. Space will fill up quickly, so we encourage you to enroll early!

You are welcome to stay at other hotels; however, NCI will provide transportation between the hotel and NCI each day only at the course hotels listed below. Transportation:

Transportation between the airport to the hotel is the responsibility of each participant.  The Clubhouse Hotel has a complementary shuttle, and you can arrange a ride by calling them directly at (701) 282-5777.  Taxis are available at the baggage claim area, and Uber & Lift are also available.  NCI will provide daily transportation only between the Northern Crops Institute and the 2 hotels listed above.  At the conclusion of the course at 4:30 PM on April 25, 2024, NCI will also provide transportation to the hotel or to the airport for those flying out early.

Cancellation Policies:

Requests to cancel a registration must be received on or before April 13, 2024 to receive a full refund. Requests to cancel a registration on or after April 14, 2024 will receive credit for a future NCI course that is good for 1 year.  If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
