Course Overview:
This course introduces participants to the fundamental and applied aspects of pasta production and quality through lectures and laboratory demonstrations. Grain and ingredient quality, specifications and processing variables and their impact on final pasta product quality are presented in detail. The course focuses primarily on traditional dry Durum wheat-based pasta; however, the incorporation of other plant proteins into Durum pasta and gluten free pasta will also be discussed. This course will be conducted in-person at the Northern Crops Institute.

Objectives:
Learn from industry professionals about the fundamentals of pasta production, quality assurance, die manufacturing and maintenance.
Gain important understanding of ingredient quality and how it impacts pasta processing and quality.
Learn how to evaluate the quality of durum wheat, semolina, and pasta.
Who Should Attend:
Managers, supervisors, technicians and others responsible for plant production, maintenance, production development, quality assurance, and sales of high-quality pasta products.

Transportation:
Transportation between the airport to the hotel is the responsibility of each participant. The Radisson Blu Hotel has a complementary airport shuttle, and you can schedule a ride by calling them directly at (701) 232-7363 the morning of your arrival into Fargo, and provide them with the flight number and arrival time. Their shuttle van is blue and has their name on the side. Taxis are available at the baggage claim area, and Uber & Lift are also available.
NCI will provide daily transportation only between the Northern Crops Institute and the Radisson Blu Hotel. At the conclusion of the course at 3:30 PM on June 29, 2023, NCI will also provide transportation to the hotel or to the airport for those flying out that day.
Cancellation Policies:
Requests to cancel a registration must be received on or before June 16, 2023 to receive a full refund. Requests to cancel a registration on or after June 16, 2023 will receive credit for a future NCI course that is good for 1 year. If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
