Course Overview:
This course will offer participants comprehensive training on operating a stone mill. They will gain hands-on experience on the NCI stone mill and have the opportunity to test the flours they produce in the bake labs. By completing this course, participants will become skilled in stone milling, enhancing the value of their products.
Objectives:
Know the mill (components, how to utilize, capacity)
How to produce the flour desired
Physical characterization (particle size, color, etc.)
Chemical characterization (gluten and starch quality)
Conditioning requirements and methods
Flour utilization in product
Major Topics:
Stone mill design, machine, and maintenance
Stone milling operation, adjustment, safety, and application
Grain cleaning, preparation and milling
Flour quality evaluation and characterization
Application of stone-milled flour
Development of bakery products using stone-milled flour
Who Should Attend:
This course is designed for custom millers, farmers or producers thinking about adding value to what they grow, artisan bakers, entrepreneurs and food scientists, recent buyers of stone mills and anyone passionate about traditional milling techniques and sustainable grain processing!

This course will be offered in-person only, and registrations are limited to 20 participants. Space will fill up quickly, so we encourage you to enroll early!

Attend NCI’s Ancient Grains Conference:
NCI will be hosting our annual Ancient Grains Conference on November 14th, 2025! Participants who are registered for this Stone Milling course are invited to attend the Ancient Grains Conference after the conclusion of the course for free. Hotel Information:
NCI is working with local hotels to reserve a room block. Check back later for more information.
Transportation:
Transportation between the airport to the hotel is the responsibility of each participant. The Clubhouse Hotel has a complementary shuttle, and you can arrange a ride by calling them directly at (701) 282-5777. Taxis are available at the baggage claim area, and Uber & Lyft are also available. NCI will provide daily transportation only between the Northern Crops Institute and the Clubhouse hotel listed above.
Cancellation Policies:
Requests to cancel a registration must be received on or before October 1, 2025 to receive a full refund. Requests to cancel a registration after that date will receive credit for a future NCI course that is good for 1 year. If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
