About the Speaker.
Dr. Amrita Ray is a food scientist by profession with special emphasis on grain processing, milling and fractionation. She has also worked in areas like flour quality, rheology, shelf-life extension, wellness food, micronutrient food fortification, product development with special reference to bakery, pasta and traditional food. She has developed industry-oriented technologies and publications in peer reviewed journals to her credit. She received her Masters degree in Food Science & Nutrition at the University of Calcutta, India, and her Doctorate degree in Food Science & Technology at the Council of Scientific & Industrial Research-Central Food Technological Research Institute, India.
