NCI Video Production | November Update
This month is an exciting one for the video blog. The long-awaited Next 5 Years Conference videos were completed and are now available on-demand virtually. Read on to find out how you can access them. In addition, the busy season of NCI courses is coming to its end with summer/fall of 2022 rolling out on a high note for video production.
NCI Coursework:
Filming was at an all-time high this month with NCI’s Plant-Based Texturized Protein Products Course making its debut again since the pre-covid era. A total of four live lab demonstrations were filmed and edited to be viewed again later by course participants.
Three of the four lab demonstrations were held in NCI’s extrusion lab, focused on extrusion products via NCI’s Wenger twin-screw extruder. Topher Dohl and Brian Plattner of Wenger Manufacturer were live on-site for the demonstrations with NCI’s Rilie Morgan. The fourth lab demonstration featured Topher Dohl discussing applications of the plant-based texturized protein utilized in everyday food products. The participants were highly engaged.
In addition to in-person courses, the NCI program team is also busy building a library of online courses. These rely heavily on video work, as videos are the primary medium for sharing lectures and presentations. A few miscellaneous online courses that required video work over this past month include Barley to Beer and Ethanol Procurement.

Next 5 Years Conference Now Available Virtually:

What’s Next:
NCI has a long-standing relationship with industry partner WISHH (World Initiative for Soy in Human Health). Once again, NCI is collaborating with WISHH, this time on an upcoming 4-part webinar series: Soy Forward. Each of the four webinars will feature videos created by NCI’s video crew.
A soymilk and tofu video has already been in the works and final touches are being made for it to be featured on the first webinar. Next, the last video shoot of this month was a four-hour shoot on the soy nut making process. In NCI’s bake lab, Neil Doty and Mary Niehaus demonstrated how to make soy nuts via deep frying and baking with two different coating finishes.
Editing of the soy nut video will occur next month, so check back in on the blog for a progress report on that, along with additional soy-focused shoots for the upcoming webinar series.
Lastly, another project in the works includes the first of many shoots featuring sourdough baking which will take place in the NDSU Baking Lab. This will be followed up by a sourdough baking video tour in January of 2023.
