Course Overview:
This course will provide training to enable participants to entirely run a stone mill. Participants will receive hands-on training with the NCI stone mill, and be able to experiment with the flours they create in the bake labs.
Participants who take this course will become proficient with stone milling, and add value to products.
Objectives:
Know the mill (components, how to utilize, capacity)
How to produce the flour desired
Physical characterization (particle size, color, etc.)
Chemical characterization (nutritional characteristics, i.e. ash)
Conditioning requirements and methods
Flour utilization
Major Topics:
Grain production, nutrition, and quality parameters
Stone mill design, machine, and maintenance
Grain cleaning and preparation for milling (tempering)
Stone milling operation, adjustment, safety, and application
Flour quality evaluation and characterization
Application of stone-milled flour
Development of bakery products using stone-milled flour

This course is designed for custom millers, producers thinking about adding value to what they grow, artisan bakers and staff, recent buyers of stone mills and more!

NCI has room blocks at the following hotel. Participants must make their own hotel reservations. You are welcome to stay at other hotels; however, NCI will provide transportation between the hotel and NCI each day only at the course hotel listed below. Transportation:
Transportation between the airports and hotel will be arranged by NCI, with more information provided prior to the start of the course.
NCI will provide daily transportation during the course.
Cancellation Policies:
Requests to cancel a registration must be received on or before June 1, 2024 to receive a full refund. Requests to cancel a registration after that date will receive credit for a future NCI course that is good for 1 year. If NCI is forced to cancel this course, all registered participants will be immediately contacted, and each will receive a full refund within 10 business days.
