NCI Cereal Innovators Webinar Series | Featuring Jonathan Bethony

Each month, NCI gives an update in the “Cereal Innovators” series that offers insight into the world of baking. This episode featured Jonathan Bethony from SEYLOU bakery in Washington D.C.  He described his creative experience with us concerning SEYLOU and the history that led to opening his own bakery.  

One of NCI’s Program Coordinators, Krista Jensen explained the course in detail:

“Through stories, pictures and Q&A, Jonathan Bethony gave an inside look into the unique origins of SEYLOU Bakery and Mill, it’s approach to Regenerative Systems Baking and its mission to establish robust, regional food systems built upon the core principles of nutritional integrity, respect for the land and intentional collaboration.”

In the webinar Jonathan described his history and experiences that lead him to the world of whole grain baking. He described that he originally came from a music and philosophy background, with home baking simply being a side hobby. This hobby soon turned into a career, and led Jonathan to attend school for Artisan Baking at San Francisco Baking Institute. After a few different job experiences and getting to work with a variety of professionals in the field, Jonathan found his passion in the world of fresh milling, organic farming, breeding, and learning about the diversity of different grains. This passion for whole grain baking led him to open his own bakery, SEYLOU, where he could have a holistic approach that focused on the farmers and farming. He continues on, giving great insight about the importance of these organic and whole grain practices.
