NCI Video Production | Feb. 2023 Update
We have a treat for you this month! This update will feature all the details of the previously highly-discussed sourdough baking shoots, all of which were completed in the past month. That’s not all though. Read on for more on event recording and some editing updates as well.
All About the Sourdough Shoots:
One of the perks of shooting a video is learning so much about the shoot’s topic. As you all know, sourdough has been the hot topic for quite a while. It was so exciting to see the scripts and the shot lists in actual footage.
Last month, we planned the work, now this month we worked the plan. The first shoot took place at Breadico bakery in Sioux Falls, SD. Owner David Nepalitano was great to work with. Clearly, he lives his passion for sourdough baking day-in and day-out. The shoot was scheduled over two perfect days and all aspects of the sourdough bread process were available for viewing. The cameras captured everything from the sourdough starter to the final loaves cooling fresh from the oven.
The next shoot took place in Washington D.C. at the SEYLOU bakery featuring owner Jonathon Bethony. Though the bakery was closed to the public while shooting, there was still plenty of footage to get with the interview and tour. There was much excitement and stress filming outside of the midwest region for the first time with the cameras.
The final sourdough shoot was one of the most fun shoots to date. It took place right in Fargo in the home bakery of Loni Larson, Sourhouse. Shooting took over 4 hours following the entire sourdough bread process. The shoot was strategically planned for a day in which Loni had dough prepared in all stages required for the long sourdough process. It was interesting to note the differences between this home bakery and the other two commercial bakeries. Loni offered her perspective on home baking in her interview.

Live Events:
The last of the big MN Wheat events took place this past month. Best of the Best is held each year in Grand Forks, ND, and Moorhead, MN. With Moorhead being the closer location right across the border, this is the event the NCI comm team came over to help film. All went well with the standard camera operating procedures.

The other live event to capture from this past month was the Northern Plains Sustainable Ag Society’s Food and Farming Conference in Fargo, ND. This was the first time NCI has worked with NPSAS on event video production, and all went smoothly.
Editing the Food and Farming videos was completed as well this month, bringing the February video total into double digits at ten videos. Though not as many as last month’s 18 videos, this past month definitely wins for video shoots attended.
With many shoots comes many hours of editing, so tune in next month and expect an edit-heavy update.
