This webinar series focuses on providing education on pulse production and its uses to increase demand and farmer’s desire to grow pulses. This month will feature Ian Heieie, Research Chef at PURIS. Join us as Ian presents on Culinary Innovation in Pea Protein, which will highlight the trials and tribulations of plant protein analogues, culinary applications for simple ingredients, and new PURIS products.

About the Speaker.

Ian Heieie | PURIS

Ian Heieie is a Minneapolis-based chef specializing in local, sustainable, and craveable food. After graduating from Le Cordon Bleu in Mendota Heights in 2011, he worked for James Beard Award-winning Paul Berglund at The Bachelor Farmer. There he learned the importance of working with local farmers and techniques for elevating humble ingredients. In 2017, he began to work at Young Joni in Northeast as Executive Chef for another James Beard Award-winning chef, Ann Kim. There he developed a dynamic kimchi program that paid homage to traditional Korean techniques and worked to optimize the pizza dough process. In 2020, Ian returned to school to pursue a bachelor’s degree in food science at the University of Minnesota. While at school, he worked at the Plant Protein Innovation Center, an interdisciplinary research center dedicated to studying plant and alternative proteins, as a research specialist. He graduated from the U of M in December 2023. After this experience, he became the first-ever Research Chef at PURIS, where he has developed a passion for broadening the culinary landscape in the plant-based market by leveraging his fine dining and science backgrounds towards a new and delicious future.
